3 New Cookbooks: Vegan Meals, Snacks, and Treats

As I mentioned in a recent post, we’ve been working on three cookbooks. Together, they form a complete package for hearty mains and desserts, soups, stews, snacks and sides, as well as decadent treats made with no refined sugar. We follow a blissful diet that is close to Nature, eating whole foods, plant-based. We bring you recipes free of gluten, dairy, too much salt and oil, and filled with love.

These books are called Triumph of Love (snacks, sides, soups), Treasures of Love (mains and desserts), and Treats of Love (vegan and gluten-free treats for special occasions). These offerings form the perfect gift for someone who has food allergies or conditions that prevent them from eating mainstream sweets, and for those, like us, who want to eat healthy, life-affirming meals, snacks, and treats.

These books bring us to nine total cookbooks since 2015, and we are excited to celebrate this milestone. This also brings us to 36 books total published by Alchemus Prime to date. We’d like to celebrate by sharing two things with you right now:

  1. Our free mini recipe book, available from our website, which contains recipes from our earlier cookbooks.
  2. A delicious recipe from one of our three new releases, Triumph of Love, below:

Tofu with Local Basil and Peanut Sauce (4-6 servings)

Ingredients

  • 1 package firm or extra firm tofu, cubed
  • 1 bell pepper, chopped finely
  • 1 cup bok choy or choy sum, chopped finely
  • 1 medium onion, chopped
  • 1 zucchini, sliced
  • 1 cup local basil (kaffir lime leaves), chopped finely
  • 1 tbsp. crushed ginger
  • 1 tbsp. crushed garlic
  • Dash of Braggs soy sauce
  • 1 tsp. sesame oil
  • Cracked black pepper to taste

Peanut Sauce

  • 3 heaped tbsp. smooth peanut butter
  • 1 tsp. sesame oil
  • Dash of Braggs soy sauce
  • 1 tsp. cracked black pepper
  • 3 cloves garlic, crushed
  • 1-inch piece ginger, crushed
  • ½ cup hot water

Method

  1. Whisk all the sauce ingredients and set aside.
  2. Sauté all the stir fry ingredients for 5-7 minutes.
  3. Add sauce and simmer for 2 minutes then switch off the stove.
  4. Allow to sit on the stove for five more minutes.
  5. Serve with fried rice, or salad.

Variations

  1. Substitute the tofu with vegan sausages or tempeh or beans or chickpeas.
  2. Add ½ cup coconut milk to the sauce for a richer flavor and texture.
  3. Try almond or cashew butter instead of peanut butter for a different flavor.
